This is perhaps the easiest recipe for a quick fix Chicken which turns out to be juicy and full of flavours. Yes, I experimented with Baked Chicken Breasts in an Oven and the results were fantastic. Although, there are many recipes on the net, but more or less, all are the same. I had all those in mind but then tried my own version. Believe me it is simple, easy and you would be proud of yourself. Try this one in your kitchen and you could thank me later.
Last week, I realised that there were Chicken Breasts lying in my fridge. I was in no mood to do an elaborate recipe but then it had to be tasty. So, rustle up this one which was a big hit in the family. It had great looks and equally great taste. Here is my recipe of Baked Chicken Breasts.
- 3 Chicken Breasts (roughly 400 gms)
- 2 Tsp Coriander Powder
- 1 Tsp Black Pepper Powder
- 1/2 Tsp Garlic Powder
- Salt to taste
- 2 Medium Size Lemons
- 1 Medium Size Onion
- 1 Tsp dried Parsley
- 1 Tsp Unsalted Butter
- 2 Tbsp Olive Oil
Marinating The Chicken Breasts
Wash the Chicken Breasts thoroughly and pat dry. Place the breasts in a pan and add Coriander Powder, Black Pepper Powder, Garlic Powder, Salt and juice of one Lemon. Mix the ingredients and ensure that the spices have coated the meat pieces thoroughly. If need be add more quantity of the spices. Once the spices have been coated, add the Olive Oil and rub the meat pieces again to ensure that the oil covers the surface evenly. Keep it aside for about an hour. Preferably more.
Baking The Chicken Breasts
Now take two pieces of Aluminum Foil (used for packing food) of about A4 size (size of a photocopy paper). Spread one sheet on the kitchen slab and place the three marinated Chicken Breasts on the sheet with a gap in between the each. Now cut the Onion in two and place it in between the gaps. Similarly, cut the second Lemon in to two and place them in between the gaps.
Now place the second sheet on top and seal it from all the sides to make it like a sealed envelope. Place it in the pre-heated oven and bake for 20 minutes at 220°. The Chicken Breasts would be done.
Making A Sauce (Optional)
If you add this sauce, the results would be more flavorful. This is quick Sauce for finishing the Baked Breasts.
Once done, carefully take out your packet from the oven and open it with delicate hands. You would observe there would be a small amount of liquid which would have oozed out of the chicken breasts (see picture above). Carefully transfer that liquid in a pan and put it on low heat. Add unsalted Butter and dried Parsley. Mix it and close the flame.
Place the Chicken Breasts in the serving plate and pour the sauce over the meat pieces. Use the onions and the lemon as the garnish.
Your Baked Chicken Breasts are ready to be enjoyed.
Pro Tip: Some recipes suggest adding a bit of Brown Sugar in the Marination (and no waiting). Some recipes also suggest searing the Chicken Breasts on a griddle to give them charred marks before baking. You may use your own options. I did not use any of them but, I am sure, they deserve a try.
